2 lbs yams, halved lengthwise
8 large garlic cloves, unpeeled
2 Tbsp. extra-virgin olive oil
1 cup thinly sliced green onions
Preheat over to 375°F. Brush small rimmed baking sheet with oil. Place yams, cut side down, on sheet; surrond with garlic. Bake 40 minutes - remove garlic. Bake yams until tender, about 30 more minutes. Peel garlic; place in medium saucepan. Scoop flesh from yam halves; add to garlic. Mash yams and garlic until almost smooth.
Heat oil in heavy small skilled over medium-high heat. Add rosemary and stir until very fragrant, about 2 minutes. Pour into yam mixture. Mix in green onions; season with salt and pepper. Transfer to bowl and serve.
