Lemon-Almond Wafers

1 cup butter (at room temp.)
1 cup sugar
1 egg
1 tsp. vanilla
2 cups cake flour
1 1/2 Tbsp. grated lemon peel
Sliced almonds

Cream butter and sugar until fluffy. Beat in egg, then vanilla. Gradually stir in flour until blended. Stir in lemon peel. Drop by half teaspoonfuls 2" apart onto ungreased cookie sheet. With a fork, press cookie. Next, gently press sliced almonds in the center of cookie. Bake at 350°F for 8-10 mins. or until edges are golden brown.
