2 ½ cups flour
2 tsp. baking powder
Pinch of salt
1 ½ tsp. baking soda
2 tsp cinnamon
2 cups sugar
2 cups grated carrots
1 ½ cups vegetable oil
4 eggs
1 cup flaked coconut
1 cup chopped pecans
1 8oz. can crushed pineapple, drained
Frosting:
½ cup butter
6oz. cream cheese
2 tsp. vanilla
1 lb confectioner's sugar
½ cup milk
Sift together all dry ingredients and set aside.
In mixer, blend sugar, oil & eggs. Add carrots, pineapple, & nuts. Gradually add flour mixture.
Pour into 3 greased 9" cake pans. Bake at 350F for 30-35 mins. Let cakes cool.
To make frosting, blend all ingredient except milk. Add enough milk to make a spreadable consistency. Keep refrigerated
