Coconut Bread

4 cups flour
1/3 cup sugar
2 tsp. Baking powder
1/4 tsp. Salt

1 egg, beaten
1 cup canned or fresh coconut milk
1/2 cup butter, melty
1 tsp. pure vanilla extract
2 cup grated unsweetened coconut
1 cup currants or raisins

Preheat oven to 350°F

Sift dry stuff into mixing bowl. Blend in wet stuff up to and including vanilla. Mix in coconut and dried fruit. Turn out on to floured board and knead slightly. Split into two loaves and pat into two buttered medium loaf pans. Bake 40-45 minutes, until toothpick comes out of center clean.
