Chocolate Peanut Butter Cookies
1 1/2 sticks (3/4 cup) butter, softened
1 cup peanut butter (chunky or smooth)
3/4 cup granulated sugar
1/4 cup packed light brown sugar
1/2 cup unsweetened cocoa powder
1 large egg
2 tsp. vanilla extract
1/2 tsp. baking soda
1 1/4 cups flour
1 cup peanut butter chips
Preheat oven to 375°F. In a large bowl with mixer on high speed, beat butter and peanut butter until creamy. Add sugars, cocoa powder, egg, vanilla, and baking soda; beat until fluffy. Reduce mixer speed to low and beat in flour just until blended. (Dough will be stiff) Stir in peanut butter chips. Roll rounded tablespoons into 1 1/4 inch balls. Place 1 1/2 inch apart on ungreased cookie sheet. Flatten with fork, making crisscross designs. Bake 8-10 minutes until tops look dry. Cool on cookie sheet 1 min. then transfer to wire rack to cool.
