2 1/2 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup packed dark brown sugar
1 cup (2 sticks) butter, softened
2 eggs
1 teaspoons vanilla extract
2 cups chips (white chocolate, semi-sweet chocolate, peanut butter, butterscotch, swirled...whichever one or combination you like)
Optional Additions:
1 cup chopped pecans or walnuts
1 cup shredded coconut
Prep: Preheat oven to 350°F. In a small bowl, combine flour, baking soda, salt, cinnamon and cocoa. Set aside.
In mixer, combine sugars and mix until uniform in color. Add butter to sugar mixture and beat on medium-high until well mixed. Add eggs, one at a time, and vanilla extract. Mix well.
Next, add the flour mixture 1 cup at a time. Beat until flour mixture is well mixed. If using coconut, add to dough and mix until just blended. With a spoon, stir in chips and nuts (if using).
Drop cookies by teaspoon-full onto cookie sheet. If you prefer, you can roll the cookies into balls and they will form perfectly round cookies. Bake at 350°F for 10-12 minutes, or until cookies are lightly browned around edges. Allow cookies to cool for 2 minutes, then transfer cookies to a wire rack and cool completely.
